cucina1-allecamelieElena’s passion and experience, a person that has been with us since the beginning of this adventure, make of her cuisine an unforgettable experience of the senses, thanks to the fresh and healthy products of the farm. We have always proposed our guests a traditional cuisine using simple and excellent raw materials. Our dishes tell the story of the territory where we leave, so for this reason besides the many products of the farm, we are counting on the collaboration with several local producers.
The menu varies with the season. For example the frantoiana soup is only available in the winter months, a dish of the farmers tradition. Perhaps less known than the florentine ribollita, this soup, prepared with black cabbage, field greens, Lucca beans and served with extra virgin olive oil, exalts both the aromas of the soil where it grows and the freshness of the new oil. We prepare it starting in November, after the first frost, when the black cabbage becomes soft and the new oil comes, until February, when the fields are still full of greens, vital to obtain the characteristic flavours of our frantoiana soup, different from the one of other provinces.

You will be able to taste also other specialties like the capocollo pork rost with lard cream, the Garmugia, the Lucca Buccellato crouton with bigongia meat, the white S.Ginese bean soup, the Garfagnana spelt flan with pumpkin cream and the extraordinary sliced beef from the Bullentini butcher.

You will be able to taste our cold cuts, produced with pigs raised by us and processed by trusted butchers of great fame. Fantastic cheeses of sheep and goat, of local farmers combined with seasonal fruit jams of our production or 0 km organic honey.

Our dishes are made with organic flours (spelt and etruscan wheat), chestnut flour and the Garfagnana Otto File Formenton (rustic wheat flour). For the soups and side dishes we use Lucca beans (scritto, lupinaro, malato, cannellino S.Ginese, and Lucca red), chickpeas and organic lentils.

The farm vegetable garden is full of aromatic herbs and typical vegetables of the Lucca area such as lucchesian onion, black cabbage, string beans, cardoon, canestrino tomato and rabes.

Particular attention is given to the preparation of desserts, given Elena’s passion for traditional patisserie that she interprets with the season and with the fruit available. She has been studying for years cakes with extra virgin olive oil base. Only here you will be able to taste a great cake with olive oil and green tea cream.

Tastings are accompanied by the organic wine of the farm.

All our dishes are prepared using the organic extra virgin olive oil produced at the farm.

We organise tastings, dinners, refreshments for ceremonies and other 0 km events. All the events, created by us or suggested by our clients, are for a minimum of 10 people, from a Sunday family lunch to a wedding banquet we always carefully guarantee quality and healthy products.
